Almond Butter & Banana Baked Oatmeal Squares
A good breakfast bar is great to have in your kitchen recipe box. These squares are no exception and will be enjoyed by all ages. Make a few batches in advance and store in the freezer to grab and go on those crazy mornings! For more on one of the main ingredients, check out the oats Color of Food pamphlet.
Ingredients
Rolled oats, gluten-free if preferred | 1.5 c |
Ground cinnamon | 1 t |
Ground nutmeg | 1/4 t |
Baking powder | 1/2 t |
Bananas, peeled and cut into chunks | 2 |
Almond butter | 1/2 c |
Maple syrup | 2 T |
Vanilla extract | 1/2 T |
Ground flaxseed | 1 T |
Warm water | 3 T |
Mixed berries (your choice) | 1 c |
Banana, peeled and sliced | 1 |
Warm almond milk | 1 c |
Instructions
- Preheat oven to 375’F
- Place all the ingredients into a food processor, and pulse until the mixture is well combined.
- Take an 8x8-inch baking tray and coat with nonstick spray. Pour the oat mixture into the tray.
- Place the tray into the oven, and bake for 35 to 40 minutes, or until golden on top and firm to the touch.
- Remove from the oven and allow to cool slightly. Then, cut into six equal pieces, and serve with your favorite mixture of berries, sliced banana, and warm almond milk, if desired.
